The selection and identification of galaxies using metal--line absorption in QSO spectra has progressed from a subfield of QSO research to a powerful technique for studying galaxies in the high redshift universe. We present results from a complete survey of these systems at $z < 1$, and preliminary results from a new survey covering $1 < z < 1.6$. Galaxies selected in this manner appear to be remarkably ``normal'' and exhibit little or no evolution in their photometric properties and space densities out to at least $z=1$ and perhaps beyond. New HST\ images extend this conclusion to the galaxy morphologies as well. We discuss the implications of these results both for the nature of metal--line QSO absorption systems per se , and for the evolution of field galaxies in general.
